[IR] Enable all protocols for ESP32 IR builds

Feature:

• Include all IR protocols for ESP32 IR builds
• Still allow customization by creating a CustomIR.h file, as documented in CustomIR-sample.h

Not sure if this is still an issue, but in the past adding too many protocols was delaying processing the decoding resulting in less accurate decoding of received signals.

Before some protocols where disabled for bin-size reasons (and CustomIR.h customization was introduced), we had all protocols enabled...
